One of the best things you can remember from traveling is the flavors you experience from the traditional and local cuisine of each region. I always say that traveling is not just about seeing new places, but more about tasting the flavors and smells that each country has to offer.
I remember the first time I went to Italy. I entered a small restaurant in a narrow and cozy alley. They had said a lot about this restaurant, but what I will never forget was the homemade pasta we ate there. It wasn’t like regular pasta, but just like the kind grandmas make at home. I can only describe the taste with one word: life! With fresh tomato sauce and fresh basil from the restaurant's garden, this experience was incomparable.
I also remember walking through the streets of Venice with my friends and arriving at a small shop where the smell of fresh pastries filled the air. We went in without thinking and tried everything from cheese and fresh bread to all kinds of pastries. But what reminded us all of our childhood was "cannoli." This delicious dessert, filled with cream and sprinkled with dark chocolate on top, had a taste that I will never forget. It was only at that moment that I understood why Italians love their pastries so much!
But Iran, traveling to every corner of this country, has always shown me a new world of local cuisine. For example, when I went to Shiraz, I had to try the local "Ghorme Sabzi." A herb stew with delicious meat and fresh vegetables that combined all kinds of flavors. When I take a bite of this dish, it feels like I’m tasting a piece of Shiraz’s history and culture. Every bite has a story.
Or, for example, on a trip to the north, when I went to a village near Chalus, the mother of a friend of mine, who was from there, made "Mirza Qasmi," a dish made with rice, eggplant, garlic, and tomatoes. It was so delicious that its taste stayed with me for a long time. Such local dishes, with their flavors that come from the land and nature, always remind me that every dish has its own special world.
Even on a trip to India, where I didn't know where to start, I encountered a new dish at every corner. A delicious "Biryani" made from local spices had an amazing taste. These spices were the same ones that gave a special feeling when they wafted through the air.
Local dishes are somehow reminiscent of past cultures and histories. People from each region create dishes based on their natural resources and ingredients, dishes that are not found anywhere else. For example, when I traveled to Thailand, one of the most delicious dishes I tasted was "Tom Yum Goong," a spicy and sour soup made from shrimp and lemon, with special spices that really burned the body. Of course, after eating this dish, I couldn’t breathe without a cold drink.
Finally, I came to the conclusion that food is always somehow tied to people's memories and emotions. For each region, food is a souvenir passed down from generation to generation, showing people the culture there in its own way. Local dishes have a sense of familiarity during travel, and at the same time, with their flavors, they give people a new sense of place and time. This is what makes experiencing local flavors and dishes such an important part of our trips when we travel.
