  •   Sugar : 300 g
  •   Water : 75 Mili Liter

  •    white /   Chicken Egg : 1 Piece
  •   Powdered Sugar : to taste

  • In a saucepan, heat 200g of fruit puree with 200g of sugar over low heat.

  • In another saucepan, mix 5g of agar-agar with 75ml of water.
  • Heat the mixture, then add 100g of sugar and bring to a boil.
  • Stir until the syrup becomes thick and reaches a temperature of 110°C (230°F).

Step 3: Whisk the Egg White

  • In a mixing bowl, beat 1 egg white until soft peaks form.
  • Gradually add the cooled fruit puree while whisking continuously.

Step 4: Combine with Syrup

  • Slowly pour the hot agar-agar syrup into the egg mixture while whisking on high speed.
  • Continue whisking until the mixture becomes thick and glossy.

Step 5: Pipe the Zephyr

  • Transfer the mixture to a piping bag fitted with a star nozzle.
  • Pipe small swirls onto a parchment-lined baking sheet.

Step 6: Let It Set

  • Allow the zephyr to set at room temperature for 5-6 hours until firm.

Step 7: Assemble and Decorate

  • Pair the zephyrs together to form sandwich-like shapes.
  • Dust with powdered sugar for an elegant finish.
