  •   Wheat Flour : 2 Cup
  •   Water : 1/2 Cup
  •   Salt : as needed
  •   Beef Shoulder : 500 g
  • Beef Neck- Lamb Shoulder- Lamb Neck-
  •   Onion : 2 Piece
  •   Garlic : 4 clove
  •   bay leaf : 2 sheets
  •    chopped /   Parsley : 3 Tablespoon
  •   Flat bread : as needed
  •   black pepper : to taste
  •   Carrot : 2 Piece

Recipe :

Step 1: Prepare the Khinkali Dough

  • Mix flour, salt (1/2 teaspon), and water until a soft dough forms.
  • Let the dough rest for 30 minutes, covered with a cloth or plastic wrap.

Step 2: Make the Filling

  • Combine ground beef (200 g), onion (1 piece), garlic (2 cloves), salt, pepper, and chopped parsley (2 tablespons) in a bowl.
  • Mix well until fully combined.

Step 3: Shape the Khinkali

  • Roll the dough on a floured surface to 2 mm thickness.
  • Cut the dough into 8-10 cm circles.
  • Place 1 tablespoon of meat filling in the center of each circle.
  • Fold the edges together and seal, creating a half-moon or triangular shape.

Step 4: Cook the Meat

  • In a pot, add the beef chunks (300 g), whole onion (1 piece), garlic (2 cloves), bay leaves, salt, and pepper.
  • Add 6 cups of water and simmer on low heat for 1.5 hours until the meat is tender.

Step 5: Add the Carrots

  • Slice the carrots into rings and add them to the soup.
  • Simmer for another 20 minutes.

Step 6: Cook the Khinkali

  • Add the prepared khinkali to the boiling soup.
  • Cook for 8-10 minutes until the dough is fully cooked.

Step 7: Serve the Soup

  • Place the khinkali, meat, and carrots into serving bowls.
  • Garnish with fresh parsley.
  • Serve with pita or lavash bread on the side.
