  •   turmeric : 1 Teaspoon
  •   Salt : as needed
  •   black pepper : to taste
  •   Olive Oil : 2 Tablespoon
  •   Frying Oil : as needed
  •   Parsley : to taste

  • Wash the eggplants and cut them in half lengthwise.
  • Scoop out the insides of the eggplants (keep the flesh for later).
  • Brush the eggplants with olive oil and bake them in a preheated oven at 180°C (356°F) for 20 minutes until they are partially cooked.

  • In a pan, sauté the chopped onion in oil until golden.
