  •   Onion : 3 Piece
  •    Oil /   Olive Oil : as needed
  • Olive Oil- Sunflower Oil- Canola Oil- Sesame Oil- Corn Oil- Butter Oil- Vegetable Fat- Margarine-
  •   turmeric : 1 Tablespoon
  •   Spinach : 20 g
  •   Parsley : 20 g
  •   Persian-Leek : 30 g
  •   Dill : 10 g
  •   cilantro : 20 g
  •   Dried Mint : 2 Tablespoon
  •   Rice Noodles : 70 g
  •   Garlic : 2 Piece
  • Garlic Powder-
  •   Curd : to taste
  •    Flour /   Wheat Flour : 2 Tablespoon
  • Wheat Flour- Whole Wheat Flour- Rice Flour-
  •   Salt : to taste

Recipe :

For 4 to 5 people


Step 1: Prepare Ingredients

  • Soak chickpeas, beans, and lentils overnight in separate bowls. Change the water a few times to reduce bloating.
  • Slice onions into thin strips and spread them on a clean cloth to dry overnight.

Step 2: Cook the Beans

  • Drain the soaked chickpeas and beans. Add them to a pot with 5 cups of water.
  • Bring the water to a boil, skim off any foam, then reduce the heat to medium-low.
  • Cover the pot partially and cook for 1 hour until soft.

Step 3: Prepare Vegetables

  • Wash and chop the herbs (parsley, cilantro, spinach, and dill) into medium pieces.
  • Avoid chopping the herbs too finely to maintain their texture in the soup.

Step 4: Fry the Onions

  • In a pan, heat some oil and fry the dried onions until golden and crispy.
  • Set aside half of the fried onions for garnish.

Step 5: Prepare Mint Oil

  • Heat 4 tablespoons of oil in a pan. Add 1 teaspoon of turmeric and mix for a few seconds.
  • Add dried mint, stir quickly, and remove from heat to prevent burning.

Step 6: Combine Ingredients

  • Add lentils and chopped herbs to a large pot. Cook for 1 hour.
  • Add the cooked chickpeas and beans along with 5 cups of boiling water. Bring to a boil.
  • Reduce heat and cook for another 30 minutes.

Step 7: Thicken the Soup

  • Mix 2 tablespoons of flour with half a cup of water until smooth. Add this mixture to the pot while stirring.
  • Stir in half of the fried onions and mint oil.

Step 8: Add the Noodles

  • Break the noodles into smaller pieces and add them to the pot.
  • Cook for 15 minutes, stirring occasionally to prevent sticking.
