  •   Calamari : 150 g
  •   Tomato : 2 Piece
  •   Onion : 1 Piece
  •   Garlic : 2 clove
  •   Saffron : as needed
  • Paprika- African Paprika-
  •   Olive Oil : 4 Tablespoon
  •   Broth : 600 Mili Liter
  •   Salt : as needed
  •   black pepper : to taste
  •   Parsley : for garnish

For 4 people


Step 1: Toast the Noodles

  • In a wide pan, heat 2 tablespoons of olive oil over medium heat.
  • Add Vermicelli or fideo noodles and toast them until golden brown, stirring often (about 5–7 minutes).
  • Remove the noodles from the pan and set aside.

Step 2: Sauté the Base

  • Add another tablespoon of olive oil to the same pan.
  • Sauté chopped onion and garlic until fragrant and soft (around 3–4 minutes).
  • Add grated tomatoes and cook until the mixture thickens slightly.
  • Season with salt, pepper, paprika, or saffron.

Step 3: Add the Seafood

  • Add cleaned shrimp, mussels, and Calamari rings to the pan.
  • Sauté for 3–4 minutes, just until slightly cooked but not fully done.

Step 4: Combine Noodles and Broth

  • Return the toasted noodles to the pan.
  • Pour in hot seafood or fish stock (about 600 ml).
  • Do not stir. Let the noodles cook undisturbed over medium heat for 8–10 minutes until liquid is absorbed.

Step 5: Rest the Dish

  • Once the broth is absorbed and noodles are tender, remove the pan from heat.
  • Cover with foil or a lid and let it rest for 5 minutes.

  • Sprinkle with fresh chopped parsley or a squeeze of lemon juice if desired.
