Ingredients :

  •   Beef Brisket : 400 g
  • Beef Neck- Lamb Leg- Lamb Shoulder- Goat Shoulder-
  •   Beef Shoulder : 600 g
  • Beef Round-
  •   Onion : 200 g
  •   Salt : as needed
  •   black pepper : as needed
  •   Sumac : to taste
  •   Dairy Butter : 25 g
  • Unsalted Butter- Ghee- Clarified Butter- European Butter-

Recipe :

For 5 people


Step 1: Grate and Chill the Onion

  • Grate the onion using a medium grater.
  • Squeeze out the excess juice from the grated onion.
  • Place the onion in the refrigerator for 20 to 30 minutes.

Step 2: Grind the Meat

  • Grind the meat twice and place it in a large bowl.

Step 3: Add Fat if Needed

Step 4: Add Onion to the Meat

  • Take the onion out of the refrigerator and add it to the ground meat.

Step 5: Season the Mixture

  • Add salt and black pepper to the meat and onion mixture.
  • Mix well to combine.

Step 6: Knead the Mixture

  • Knead the mixture for 10 to 15 minutes until it becomes cohesive and sticky.

Step 7: Add Saffron and Spices (Optional)

  • If desired, add saffron and other spices to the mixture.

Step 8: Chill the Mixture

  • Cover the mixture with plastic wrap and refrigerate for 4 hours.
  • If you have more time, refrigerate overnight for better flavor.

Step 9: Knead Again

  • After removing the mixture from the refrigerator, knead it for 5 minutes.

  • Place a bowl of warm water or the water from the squeezed onions next to you.

  • Wet your hands, take a portion of the meat mixture (about the size of a meatball), place it on top of the skewer, and spread it evenly.
