  •   Eggplant/Aubergine : 6 Piece
  •   Onion : 3 Piece
  •   Olive Oil : 50 Mili Liter
  •    ground /   Beef Tenderloin : 200 g
  • Beef Ribeye- Beef Shoulder- Beef Round- Lamb Leg- Lamb Shoulder- Goat Shoulder-
  •   Green Pepper : 2 Piece
  •   Garlic : 2 clove
  •   Tomato : 3 Piece
  •   Parsley : 1/2 bunch
  •   Salt : as needed
  •   black pepper : to taste
  •   Sunflower Oil : 5 Tablespoon

Karnıyarık, tender eggplants stuffed with a flavorful mix of seasoned meat, tomatoes, and spices, creating a perfect balance of savory goodness in every bite!


Recipe :

For 6 people


Step 1: Prepare the Eggplants

  • Cut off the stems of the eggplants and peel them in stripes (alternating skin on and off).
  • Make a long slit down the middle of each eggplant without cutting through the ends.

Step 2: Soak in Saltwater

  • Place the eggplants in salted water and let them soak for 15-20 minutes.
  • Remove the eggplants from the water, squeeze out excess liquid with your hands, and pat them dry.

Step 3: Fry the Eggplants

  • Heat plenty of oil in a deep pan.
  • Fry the eggplants until all sides are golden brown.
  • Place the fried eggplants on a plate and set aside.

Step 4: Prepare for Baking

  • Preheat the oven to 200°C (392°F).
  • Place the fried eggplants on a baking tray.

Step 5: Cook the Filling

  • Finely chop the onions and sauté them in olive oil until soft and golden.
  • Add the ground meat and cook over medium heat until lightly browned.

Step 6: Add Vegetables and Seasoning

  • Add finely chopped green peppers and minced garlic to the pan.
  • Season with salt and black pepper. Stir well.
